Ingredients
- 4 pigs' trotters, cleaned and split
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken or beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
Instructions
- Preheat the oven to 325 degrees F.
- In a large Dutch oven, heat the vegetable oil over medium-high heat.
- Add the pigs' trotters and brown on all sides, about 8-10 minutes. Remove from the pot and set aside.
- Add the onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
- Stir in the bay leaves, thyme, salt, and black pepper.
- Sprinkle the flour over the vegetables and cook for 2 minutes, stirring constantly.
- Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.
- Stir in the tomato paste and broth. Bring to a simmer.
- Return the pigs' trotters to the pot, cover, and transfer to the preheated oven.
- Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
- Remove the pigs' trotters from the pot and keep warm.
- Strain the braising liquid and skim off any fat. Serve the pigs' trotters with the strained sauce.
