Instructions

  • Preheat the oven to 325 degrees F.

  • Add the pigs' trotters and brown on all sides, about 8-10 minutes. Remove from the pot and set aside.
  • Add the onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
  • Stir in the bay leaves, thyme, salt, and black pepper.
  • Sprinkle the flour over the vegetables and cook for 2 minutes, stirring constantly.
  • Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.
  • Stir in the tomato paste and broth. Bring to a simmer.
  • Return the pigs' trotters to the pot, cover, and transfer to the preheated oven.
  • Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  • Remove the pigs' trotters from the pot and keep warm.
  • Strain the braising liquid and skim off any fat. Serve the pigs' trotters with the strained sauce.
