  • On a floured surface, knead the dough until smooth. Cover with a clean kitchen towel and let it rest for 30 minutes.
  • In a separate bowl, mix together the mashed potatoes and shredded cheddar cheese. Season with salt and pepper to taste.
  • Roll out the dough on a floured surface and cut out circles using a round cutter or a glass. Place a spoonful of the potato and cheese filling in the center of each circle. Fold the dough over the filling and press the edges to seal, creating a half-moon shape.
  • Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.
