- 2 cups all-purpose flour

- 1 large egg
- 1/2 cup sour cream

Instructions
- In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt. Make a well in the center and add 1 large egg, 1/2 cup sour cream, and melted butter. Mix until a dough forms.
- On a floured surface, knead the dough until smooth. Cover with a clean kitchen towel and let it rest for 30 minutes.
- In a separate bowl, mix together the mashed potatoes and shredded cheddar cheese. Season with salt and pepper to taste.
- Roll out the dough on a floured surface and cut out circles using a round cutter or a glass. Place a spoonful of the potato and cheese filling in the center of each circle. Fold the dough over the filling and press the edges to seal, creating a half-moon shape.
- Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes.
