Ingredients
- 1 (5-pound) prime rib roast
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 450 degrees F.
- In a small bowl, mix together the minced garlic, olive oil, rosemary, and thyme.
- Season the prime rib roast with salt and pepper, then rub the garlic and herb mixture all over the roast.
- Place the roast on a rack in a roasting pan, fat side up.
- Roast for 15 minutes, then reduce the oven temperature to 325 degrees F.
- Continue roasting for about 2 hours, or until the internal temperature reaches 135 degrees F for medium-rare.
- Remove the roast from the oven and let it rest for 15-20 minutes before carving.
- Slice and serve the prime rib with your favorite sides and enjoy!
