  • Place the roast on a rack in a roasting pan, fat side up.
  • Roast for 15 minutes, then reduce the oven temperature to 325 degrees F.
  • Continue roasting for about 2 hours, or until the internal temperature reaches 135 degrees F for medium-rare.
  • Remove the roast from the oven and let it rest for 15-20 minutes before carving.
