Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium saucepan over medium heat, combine 1 cup of brown sugar, 1/2 cup of heavy cream, 2 tablespoons of butter, and 1/2 teaspoon of salt. Stir constantly until the mixture reaches 240°F on a candy thermometer, about 7-8 minutes.
- Remove the saucepan from the heat and stir in 1 teaspoon of vanilla extract and 1 cup of pecans. Continue stirring until the mixture thickens and becomes creamy, about 2-3 minutes.
- Using a spoon, drop the pecan praline mixture onto the prepared baking sheet, forming small clusters. Let them cool and harden for about 10 minutes.
- In a microwave-safe bowl, melt 1/2 cup of semisweet chocolate chips in 30-second intervals, stirring in between, until smooth and melted.
- Drizzle the melted chocolate over the cooled pecan praline clusters using a spoon or a piping bag.
