Ingredients
- 1 cup of pitted dates
- 1/2 cup of peanut butter
- 1/4 cup of honey
- 1 teaspoon of vanilla extract
- 1 1/2 cups of rolled oats
- 1/4 cup of chopped peanuts
- 1/4 cup of mini chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Grease an 8x8 inch baking dish.
- In a food processor, blend 1 cup of pitted dates, 1/2 cup of peanut butter, 1/4 cup of honey, and 1 teaspoon of vanilla extract until smooth.
- In a large bowl, mix the date and peanut butter mixture with 1 1/2 cups of rolled oats until well combined.
- Press the mixture into the prepared baking dish, using a spatula to smooth the top.
- Sprinkle 1/4 cup of chopped peanuts and 1/4 cup of mini chocolate chips over the top of the mixture, pressing them lightly into the surface.
- Bake for 18-20 minutes, or until the edges are golden brown.
- Allow to cool completely before cutting into bars. Enjoy!
