  • 2 tablespoons sugar

Instructions

  • In a small saucepan, combine 1/4 cup of sugar and 1/4 cup of water. Heat over medium heat, stirring until the sugar is dissolved. Add the sliced peaches and simmer for 3-4 minutes until the peaches are tender. Remove from heat and let cool.
  • In a separate saucepan, combine the raspberries, 2 tablespoons of sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the sauce thickens, about 5 minutes. Remove from heat and strain the sauce to remove the seeds. Let cool.
  • To assemble, place a scoop of vanilla ice cream in each serving dish. Top with the cooked peaches and drizzle with the raspberry sauce. Garnish with fresh mint leaves and serve immediately.
