  • 1 cup fresh raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 pint vanilla ice cream
  • Fresh mint leaves for garnish

Instructions

  • In a small saucepan, combine 1/4 cup of sugar and 1/4 cup of water. Heat over medium heat, stirring until the sugar is dissolved. Add the sliced peaches and simmer for 3-4 minutes until the peaches are tender. Remove from heat and let cool.

Dessert
French

Peach Melba is a classic dessert created by legendary French chef Auguste Escoffier in the late 19th century. It consists of ripe peaches, vanilla ice cream, and raspberry sauce, and is named after Australian opera singer Nellie Melba. Escoffier invented the dish at the Savoy Hotel in London to honor Melba, and it quickly became a sensation. The combination of sweet peaches, creamy ice cream, and tangy raspberry sauce creates a delightful harmony of flavors. Today, the best versions of Peach Melba can be found in fine dining restaurants and pastry shops around the world, where chefs strive to perfect the balance of textures and tastes. For a twist, some chefs incorporate poached peaches or use mango or passion fruit instead of raspberries for the sauce. The key to a perfect Peach Melba lies in using perfectly ripe, juicy peaches and high-quality vanilla ice cream, complemented by a vibrant raspberry sauce.
