Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, gently toss together 1 1/2 pounds of sliced peaches, 1/4 cup granulated sugar, 2 tablespoons cornstarch, 1 tablespoon grated fresh ginger, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt until the peaches are evenly coated. Set aside.
  • Unroll the refrigerated pie crust onto the prepared baking sheet. Spoon the peach mixture onto the center of the crust, leaving a 2-inch border around the edges. Gently fold the edges of the crust over the peaches, pleating as needed.
  • Brush the edges of the crust with the beaten egg and sprinkle the crust and peaches with 2 tablespoons of turbinado sugar.
  • Bake the galette for 35-40 minutes, or until the crust is golden brown and the peaches are bubbling. If the crust starts to brown too quickly, cover the edges with foil.
  • Remove the galette from the oven and let it cool for 10 minutes before slicing. Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
