Instructions

  • Preheat the oven to 375°F (190°C).
  • In a food processor, combine 1 1/4 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Pulse to mix.
  • Add the cold, cubed butter to the food processor and pulse until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Chill in the refrigerator for 15 minutes.
  • In a bowl, mix together 1/4 cup of almond flour, 1/4 cup of powdered sugar, and 1/4 teaspoon of almond extract. Spread this almond mixture over the chilled crust.
  • Arrange the sliced peaches in a circular pattern over the almond mixture.
  • Bake the tart in the preheated oven for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
  • In a small saucepan, heat 2 tablespoons of apricot preserves over low heat until melted. Brush the melted preserves over the warm peaches.
  • Sprinkle 1 tablespoon of sliced almonds over the top of the tart.
  • Allow the tart to cool before serving. Enjoy!
