Mushroom Pasta Amatriciana

Ingredients
- 8 oz of pasta
- 4 slices of bacon, chopped
- 1/2 cup of onion, diced
- 2 cloves of garlic, minced
- 1 can (14 oz) of diced tomatoes
- 1/2 teaspoon of red pepper flakes
- 1 cup of mushrooms, sliced
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the diced onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Stir in the diced tomatoes and red pepper flakes. Simmer for 10 minutes, stirring occasionally.
- In a separate skillet, sauté the sliced mushrooms in a little olive oil until they are golden brown and tender.
- Add the cooked pasta and sautéed mushrooms to the skillet with the tomato sauce. Toss to combine and heat through.
- Season with salt and pepper to taste. Serve the pasta amatriciana topped with the crispy bacon and grated Parmesan cheese.
