  • 1 cup of mushrooms, sliced
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  • Add the diced onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
  • Stir in the diced tomatoes and red pepper flakes. Simmer for 10 minutes, stirring occasionally.
  • In a separate skillet, sauté the sliced mushrooms in a little olive oil until they are golden brown and tender.
  • Add the cooked pasta and sautéed mushrooms to the skillet with the tomato sauce. Toss to combine and heat through.
  • Season with salt and pepper to taste. Serve the pasta amatriciana topped with the crispy bacon and grated Parmesan cheese.
