Ingredients
- 4 tablespoons unsalted butter
- 1/2 cup diced yellow onion
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 3 cups chicken broth
- 4 cups chopped broccoli florets
- 1 cup matchstick-cut carrots
- 2 1/2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot, melt 4 tablespoons of unsalted butter over medium heat.
- Add 1/2 cup of diced yellow onion and sauté until softened, about 3-4 minutes.
- Sprinkle in 1/4 cup of all-purpose flour and cook, stirring constantly, for 2 minutes to make a roux.
- Gradually whisk in 2 cups of half-and-half and 3 cups of chicken broth, stirring constantly until the mixture is smooth.
- Add 4 cups of chopped broccoli florets and 1 cup of matchstick-cut carrots to the pot. Bring to a simmer and cook for 20-25 minutes, or until the vegetables are tender.
- Reduce the heat to low and gradually stir in 2 1/2 cups of shredded sharp cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
