Ingredients
- 4 sea bass fillets (6 oz each)
- 1/4 cup unsalted butter, softened
- 2 tablespoons chopped fresh herbs (such as parsley, thyme, and chives)
- 2 tablespoons olive oil
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix the softened butter with the chopped fresh herbs. Season with salt and pepper to taste. Set aside.
- Pat the sea bass fillets dry with paper towels and season both sides with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the sea bass fillets to the skillet, skin side down. Cook for 4-5 minutes until the skin is crispy and golden brown. Carefully flip the fillets and cook for an additional 2-3 minutes until the fish is cooked through. Remove from the skillet and set aside.
- While the sea bass is cooking, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 15-20 minutes, or until the vegetables are tender and slightly caramelized.
- To serve, divide the roasted vegetables among 4 plates. Top each plate with a pan-seared sea bass fillet and a dollop of herb butter. Enjoy!
