Ingredients
- 2 filet mignon steaks, 6 ounces each
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 sprigs of fresh thyme
- Salt and pepper to taste
Instructions
- Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for 30 minutes.
- Season the steaks generously with salt and pepper on both sides.
- Heat a large cast-iron skillet over high heat until very hot, about 5 minutes.
- Add the olive oil to the skillet and carefully place the steaks in the pan. Sear for 4 minutes without moving them.
- Flip the steaks and add the butter, garlic, and thyme to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter for 1-2 minutes, until the steaks are cooked to your desired doneness.
- Remove the steaks from the pan and let them rest for 5 minutes before serving.
