Instructions

  • Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for 30 minutes.
  • Season the steaks generously with salt and pepper on both sides.
  • Heat a large cast-iron skillet over high heat until very hot, about 5 minutes.
  • Add the olive oil to the skillet and carefully place the steaks in the pan. Sear for 4 minutes without moving them.
  • Flip the steaks and add the butter, garlic, and thyme to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter for 1-2 minutes, until the steaks are cooked to your desired doneness.
  • Remove the steaks from the pan and let them rest for 5 minutes before serving.
