French

Palmiers, also known as elephant ears or palm leaves, are a classic French pastry with a history dating back to the 17th century. The name "palmier" refers to its resemblance to a palm leaf. This delectable treat is made from puff pastry that is rolled in sugar, creating a caramelized, crispy texture. Renowned French chefs like Auguste Escoffier and Marie-Antoine Carême have popularized palmiers, and today, they are enjoyed worldwide. In France, they are often served with coffee or tea as a sweet indulgence. The best palmiers can be found in traditional French patisseries, where skilled pastry chefs meticulously craft each delicate layer of flaky pastry. For a twist, some chefs add cinnamon or chocolate to the sugar filling, elevating the flavor profile. Whether enjoyed in a quaint Parisian café or homemade in your kitchen, palmiers are a delightful treat for any occasion.
