Instructions

  • Preheat the oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a medium bowl, whisk together 1 cup of flour, 1 cup of rolled oats, 1/2 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  • In a separate large bowl, mix 1/2 cup of melted butter, 1/2 cup of brown sugar, and 1/4 cup of granulated sugar until well combined.
  • Add 1 egg and 1 teaspoon of vanilla extract to the butter and sugar mixture, and mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in 3/4 cup of raisins until evenly distributed in the batter.
  • Press the mixture evenly into the prepared baking pan.
  • Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
