Ingredients
- 1 cup of all-purpose flour
- 1 cup of rolled oats
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/2 cup of unsalted butter, melted
- 1/2 cup of brown sugar
- 1/4 cup of granulated sugar
- 1 large egg
- 1 teaspoon of vanilla extract
- 3/4 cup of raisins
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, whisk together 1 cup of flour, 1 cup of rolled oats, 1/2 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
- In a separate large bowl, mix 1/2 cup of melted butter, 1/2 cup of brown sugar, and 1/4 cup of granulated sugar until well combined.
- Add 1 egg and 1 teaspoon of vanilla extract to the butter and sugar mixture, and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in 3/4 cup of raisins until evenly distributed in the batter.
- Press the mixture evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan before using the parchment paper overhang to lift them out and cut into squares.
