Ingredients
- 3 lbs of corned beef brisket
- 6 cups of water
- 6 medium potatoes, peeled and quartered
- 6 carrots, peeled and cut into 2-inch pieces
- 1 large head of cabbage, cut into wedges
- 1 onion, peeled and quartered
- 6 whole cloves
- 1 teaspoon of black peppercorns
- 1 bay leaf
Instructions
- In a large pot, place the corned beef brisket and cover with 6 cups of water.
- Add the whole cloves, black peppercorns, and bay leaf to the pot.
- Bring the water to a boil, then reduce the heat to a simmer and cover the pot. Cook for 2 hours.
- Add the potatoes, carrots, onion, and cabbage to the pot with the corned beef. If necessary, add more water to cover the vegetables.
- Cover the pot and continue to simmer for an additional 30-45 minutes, or until the vegetables are tender.
- Remove the corned beef and vegetables from the pot and let them rest for 10 minutes before slicing the beef.
- Serve the sliced corned beef with the vegetables and enjoy!
