Instructions

  • Preheat the oven to 300°F. Line two baking sheets with parchment paper.
  • In a medium bowl, sift together the almond flour and powdered sugar. Set aside.
  • In a large bowl, beat the egg whites with an electric mixer until foamy. Gradually add the granulated sugar and continue to beat until stiff, glossy peaks form.
  • Gently fold the almond flour mixture into the egg whites until smooth and shiny.
  • Divide the batter into three equal portions. Add a small amount of gel food coloring to each portion to create purple, blue, and pink batters. Gently fold the colors into the batter, being careful not to overmix.
  • Transfer each colored batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets, leaving space between each one.
  • Tap the baking sheets on the counter to release any air bubbles, then let the macarons sit at room temperature for 30 minutes to form a skin.
  • Bake the macarons for 12-15 minutes, rotating the pans halfway through, until set. Let cool completely on the baking sheets.
  • In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract, beating until smooth and fluffy.
  • Pair the macarons by size and spread a small amount of the buttercream filling on the flat side of one macaron. Sandwich with another macaron and gently press together.
