Nasi Goreng

Ingredients
- 3 cups of cooked white rice
- 2 tablespoons of vegetable oil
- 3 cloves of garlic, minced
- 1 onion, finely chopped
- 1 red chili, finely chopped
- 1/2 cup of diced chicken or shrimp
- 2 eggs, beaten
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of soy sauce
- 1 teaspoon of shrimp paste (terasi)
- 1/2 teaspoon of ground white pepper
- 1/2 cup of mixed vegetables (carrots, peas, bell peppers)
- 4 green onions, chopped
- Salt to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the minced garlic, chopped onion, and red chili. Stir-fry for 2 minutes until fragrant.
- Add the diced chicken or shrimp and cook until fully cooked through.
- Push the ingredients to one side of the wok, then add the beaten eggs to the other side. Scramble the eggs until cooked, then mix with the other ingredients.
- Add the cooked white rice to the wok, breaking up any clumps as you stir-fry.
- Pour in the sweet soy sauce, soy sauce, and shrimp paste. Stir well to combine.
- Add the mixed vegetables and continue to stir-fry for 3-4 minutes until the vegetables are tender.
- Season with ground white pepper and salt to taste. Stir in the chopped green onions.
- Transfer the Nasi Goreng to serving plates and garnish with additional chopped green onions, if desired. Serve hot and enjoy!
