Ingredients

  • 3 cups of cooked white rice
  • 2 tablespoons of vegetable oil
  • 3 cloves of garlic, minced
  • 1 onion, finely chopped
  • 1 red chili, finely chopped
  • 1/2 cup of diced chicken or shrimp
  • 2 eggs, beaten
  • 2 tablespoons of sweet soy sauce (kecap manis)
  • 1 tablespoon of soy sauce
  • 1 teaspoon of shrimp paste (terasi)
  • 1/2 teaspoon of ground white pepper
  • 1/2 cup of mixed vegetables (carrots, peas, bell peppers)
  • 4 green onions, chopped
  • Salt to taste

Instructions

  • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  • Add the minced garlic, chopped onion, and red chili. Stir-fry for 2 minutes until fragrant.
  • Add the diced chicken or shrimp and cook until fully cooked through.
  • Push the ingredients to one side of the wok, then add the beaten eggs to the other side. Scramble the eggs until cooked, then mix with the other ingredients.
  • Add the cooked white rice to the wok, breaking up any clumps as you stir-fry.
  • Pour in the sweet soy sauce, soy sauce, and shrimp paste. Stir well to combine.
  • Add the mixed vegetables and continue to stir-fry for 3-4 minutes until the vegetables are tender.
  • Season with ground white pepper and salt to taste. Stir in the chopped green onions.
  • Transfer the Nasi Goreng to serving plates and garnish with additional chopped green onions, if desired. Serve hot and enjoy!
