Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon salt
  • 1 tablespoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 cup hot sauce
  • 1/2 cup vegetable oil

Instructions

  • In a large bowl, mix the buttermilk and hot sauce. Add the chicken pieces and let them marinate for at least 1 hour, or overnight for best results.
  • In a separate bowl, combine the flour, salt, cayenne pepper, brown sugar, paprika, garlic powder, onion powder, and black pepper.
  • Dredge the marinated chicken pieces in the seasoned flour mixture, making sure they are evenly coated.
  • In a large skillet, heat the vegetable oil over medium-high heat. Carefully place the chicken pieces in the hot oil and fry for about 6-8 minutes per side, or until golden brown and cooked through.
  • In a small saucepan, heat 1/2 cup of vegetable oil until it reaches 350°F. In a heatproof bowl, mix 2 tablespoons of cayenne pepper and 1 tablespoon of brown sugar. Carefully pour the hot oil over the cayenne pepper and brown sugar mixture, stirring constantly until well combined.
  • Once the chicken is cooked, place it on a wire rack to drain any excess oil. Using a brush, generously coat the fried chicken with the spicy oil mixture.
  • Serve the Nashville Hot Chicken immediately with pickles and white bread for an authentic experience.

Nashville Hot Chicken is a spicy and flavorful dish that originated in Nashville, Tennessee. Legend has it that the dish was created by Thornton Prince's scorned girlfriend who sought revenge by dousing his fried chicken with an excessive amount of hot spices. The dish gained popularity in the 1930s and has since become a staple of Nashville's culinary scene. Today, it's served in numerous restaurants across the city, with each chef putting their own unique spin on the recipe. The key to a perfect Nashville Hot Chicken lies in the balance of heat and flavor, achieved through a blend of cayenne pepper, paprika, and other spices. Prince's Hot Chicken Shack and Hattie B's are two iconic Nashville establishments known for serving exceptional Hot Chicken. Whether you're in Nashville or trying to recreate the dish at home, getting the spice level just right is crucial for an authentic Nashville Hot Chicken experience.
