Ingredients
- 1 sheet of puff pastry, thawed
- 2 cups of whole milk
- 1/2 cup of granulated sugar
- 1/4 cup of cornstarch
- 4 egg yolks
- 1 teaspoon of vanilla extract
- 1/2 cup of powdered sugar, for dusting
Instructions
- Preheat the oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry into a 12x12 inch square. Cut into 12 equal squares and place them on a parchment-lined baking sheet. Prick the pastry squares with a fork to prevent them from puffing up too much. Bake for 15-20 minutes or until golden brown and puffed. Let cool completely.
- In a saucepan, heat the milk over medium heat until steaming but not boiling. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth. Gradually pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in the vanilla extract. Transfer the pastry cream to a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 1 hour.
- To assemble the Napoleons, place a spoonful of pastry cream onto a puff pastry square and spread it evenly. Place another puff pastry square on top and dust with powdered sugar. Repeat with the remaining pastry and cream. Serve immediately and enjoy!
