Ingredients
- 8 oz of pasta
- 2 tbsp olive oil
- 3 cloves of garlic, minced
- 8 oz of mushrooms, sliced
- 4 cups of fresh spinach
- 1/2 cup of vegetable broth
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
- Add 8 oz of sliced mushrooms to the skillet and cook for 5-7 minutes until they are golden brown and tender.
- Stir in 4 cups of fresh spinach and cook for 2-3 minutes until wilted.
- Pour in 1/2 cup of vegetable broth and let it simmer for 2-3 minutes until slightly reduced.
- Add the cooked pasta to the skillet and toss to combine with the mushroom and spinach mixture.
- Sprinkle 1/4 cup of grated Parmesan cheese over the pasta and toss to coat. Season with salt and pepper to taste.
- Serve the mushroom spinach pasta hot, garnished with additional Parmesan cheese if desired. Enjoy!
