Instructions

  • Cook the pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
  • Add 8 oz of sliced mushrooms to the skillet and cook for 5-7 minutes until they are golden brown and tender.
  • Stir in 4 cups of fresh spinach and cook for 2-3 minutes until wilted.
  • Pour in 1/2 cup of vegetable broth and let it simmer for 2-3 minutes until slightly reduced.
  • Add the cooked pasta to the skillet and toss to combine with the mushroom and spinach mixture.
  • Sprinkle 1/4 cup of grated Parmesan cheese over the pasta and toss to coat. Season with salt and pepper to taste.
