Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a medium saucepan, combine 1 cup of wild rice and 2 cups of vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 45 minutes, or until the rice is tender and the liquid is absorbed.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 diced onion and cook until softened, about 5 minutes. Add 3 minced garlic cloves and cook for an additional 1 minute.
- Add 8 oz of sliced mushrooms to the skillet and cook until they release their liquid and become golden brown, about 8-10 minutes.
- Stir in 2 cups of chopped fresh spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and 1/2 teaspoon of dried thyme.
- In a large bowl, combine the cooked wild rice, mushroom and spinach mixture, 1/2 cup of crumbled feta cheese, and 1/4 cup of grated Parmesan cheese. Mix well to combine.
- Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle additional feta cheese on top if desired.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the top is golden brown.
- Allow to cool for a few minutes before serving. Enjoy!
