Instructions

  • Preheat the oven to 375 degrees F.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add 1 cup of chopped mushrooms and cook for 5 minutes, until softened.
  • Add 2 cups of fresh spinach and 2 cloves of minced garlic to the skillet, and cook for an additional 2 minutes until the spinach is wilted.
  • Remove the skillet from the heat and stir in 1/2 cup of shredded mozzarella cheese, 1/4 cup of grated Parmesan cheese, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Cut a pocket into each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the mushroom and spinach mixture, and secure with toothpicks if necessary.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  • Remove the toothpicks before serving, and enjoy!
