Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of chopped mushrooms
- 2 cups of fresh spinach
- 1/2 cup of shredded mozzarella cheese
- 1/4 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 375 degrees F.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 1 cup of chopped mushrooms and cook for 5 minutes, until softened.
- Add 2 cups of fresh spinach and 2 cloves of minced garlic to the skillet, and cook for an additional 2 minutes until the spinach is wilted.
- Remove the skillet from the heat and stir in 1/2 cup of shredded mozzarella cheese, 1/4 cup of grated Parmesan cheese, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the mushroom and spinach mixture, and secure with toothpicks if necessary.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
- Remove the toothpicks before serving, and enjoy!
