  • Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • In a small bowl, mix together the mozzarella cheese and sun-dried tomatoes. Stuff each chicken breast with the cheese and tomato mixture, then season the outside of the chicken breasts with salt, pepper, and Italian seasoning.
  • Wrap each stuffed chicken breast with 2 slices of prosciutto, making sure to cover the entire breast.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed and wrapped chicken breasts to the skillet and cook for 3-4 minutes on each side, or until the prosciutto is crispy and the chicken is golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let the chicken rest for a few minutes before serving. Enjoy!
