Instructions

  • Preheat a large skillet over medium-high heat with 2 tablespoons of vegetable oil.
  • Season the thinly sliced beef or pork with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
  • Add the seasoned meat to the hot skillet and cook for 3-4 minutes on each side, or until fully cooked. Remove from heat and set aside.
  • Cut the bolillo rolls in half lengthwise and spread 2 tablespoons of refried beans on the bottom half of each roll.
  • Place the cooked meat on top of the beans, followed by the sliced avocado, pickled jalapenos, and shredded cheese.
  • In a small bowl, mix together 1/4 cup of mayonnaise and 1 tablespoon of lime juice. Spread the mayonnaise mixture on the top half of each roll.
  • Sprinkle the chopped cilantro and diced onion over the top of the assembled tortas.
  • Place the prepared tortas in a preheated oven at 350°F for 5-7 minutes, or until the cheese is melted and the bread is slightly toasted.
