Mexican Chicken Fajitas

Ingredients
- 1 pound of boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/2 teaspoon of oregano
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 8 small flour tortillas
- Optional toppings: shredded cheese, sour cream, salsa, guacamole
Instructions
- In a large bowl, combine the sliced chicken with the vegetable oil, minced garlic, chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper. Toss to coat the chicken evenly and set aside to marinate for 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for 5-6 minutes, or until the chicken is cooked through and slightly browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add a little more oil if needed and sauté the sliced bell peppers and onions for 3-4 minutes, or until they are tender-crisp.
- Return the cooked chicken to the skillet with the sautéed peppers and onions. Toss everything together and cook for an additional 2-3 minutes to heat through.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- To serve, spoon the chicken and pepper mixture onto the warm tortillas. Add optional toppings such as shredded cheese, sour cream, salsa, and guacamole if desired.
- Roll up the tortillas and serve the chicken fajitas immediately. Enjoy!
