Ingredients
- 1 cup of white rice
- 1 pound of chicken breast, diced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 cup of salsa
- 1 avocado, sliced
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Cook the white rice according to package instructions and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, cumin, chili powder, garlic powder, and onion powder. Cook until the chicken is no longer pink, about 5-7 minutes.
- Add the black beans and corn kernels to the skillet with the chicken. Cook for an additional 2-3 minutes until heated through.
- To assemble the burrito bowls, divide the cooked rice among 4 bowls. Top each bowl with the chicken, black bean, and corn mixture.
- Top each bowl with salsa, avocado slices, shredded cheddar cheese, and chopped cilantro.
- Season with salt and pepper to taste and serve with lime wedges on the side.
