  • Lay out the whole wheat tortillas on a clean surface.
  • Spread 1/4 cup of hummus onto each tortilla, leaving a border around the edges.
  • Divide the diced cucumber, tomatoes, red onion, feta cheese, and chopped parsley evenly among the tortillas, placing the ingredients in the center of each tortilla.
  • Season with salt and pepper to taste.
  • Fold the sides of the tortillas towards the center, then roll them up tightly to create a wrap.
  • If desired, heat a non-stick skillet over medium heat and lightly toast the wraps for 1-2 minutes on each side until they are golden brown and crispy.
  • Slice the wraps in half diagonally and serve immediately. Enjoy!
