Ingredients
- 4 whole wheat tortillas
- 1 cup of hummus
- 1 cup of diced cucumber
- 1 cup of diced tomatoes
- 1/2 cup of sliced red onion
- 1/2 cup of crumbled feta cheese
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions
- Lay out the whole wheat tortillas on a clean surface.
- Spread 1/4 cup of hummus onto each tortilla, leaving a border around the edges.
- Divide the diced cucumber, tomatoes, red onion, feta cheese, and chopped parsley evenly among the tortillas, placing the ingredients in the center of each tortilla.
- Season with salt and pepper to taste.
- Fold the sides of the tortillas towards the center, then roll them up tightly to create a wrap.
- If desired, heat a non-stick skillet over medium heat and lightly toast the wraps for 1-2 minutes on each side until they are golden brown and crispy.
- Slice the wraps in half diagonally and serve immediately. Enjoy!
