  • Spread 1/4 cup of hummus onto each tortilla, leaving a border around the edges.
  • Divide the diced cucumber, tomatoes, red onion, Kalamata olives, feta cheese, and mixed greens evenly among the tortillas, placing the ingredients in the center of each tortilla.
  • Season with salt and pepper to taste.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to create wraps.
  • If desired, heat a non-stick skillet over medium heat and lightly toast the wraps for 1-2 minutes on each side until they are warm and the tortillas are slightly crispy.
