Mediterranean Grilled Eggplant Veggie Wrap

Ingredients
- 1 large eggplant, sliced into 1/2 inch rounds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- 4 whole wheat tortillas
- 1/4 cup hummus
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Brush the eggplant slices with 1 tablespoon of olive oil and sprinkle with salt and pepper.
- Grill the eggplant for 3-4 minutes on each side, until tender and grill marks appear. Remove from the grill and set aside.
- In a bowl, toss the red bell pepper, yellow bell pepper, and red onion with the remaining olive oil, dried oregano, salt, and pepper.
- Grill the pepper and onion mixture for 4-5 minutes, until slightly charred and tender. Remove from the grill and set aside.
- Warm the whole wheat tortillas on the grill for 1-2 minutes on each side.
- To assemble the wraps, spread 1 tablespoon of hummus on each tortilla, then layer with grilled eggplant, grilled peppers and onions, cherry tomatoes, and Kalamata olives. Sprinkle with crumbled feta cheese.
- Fold in the sides of the tortilla and roll up tightly to enclose the filling.
