  • 1 pound of large shrimp, peeled and deveined
  • 1 cup of couscous
  • 1 1/2 cups of chicken or vegetable broth
  • 1/4 cup of extra virgin olive oil
  • 1/4 cup of fresh lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of pitted Kalamata olives, sliced
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of chopped fresh parsley

Instructions

  • In a medium saucepan, bring the broth to a boil. Stir in 1 cup of couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  • In a small bowl, whisk together 1/4 cup of olive oil, 1/4 cup of lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Set aside.
  • Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
  • Pour the olive oil and lemon juice mixture into the skillet and cook for 1-2 minutes, stirring constantly.
  • Add the cooked couscous, cherry tomatoes, and Kalamata olives to the skillet. Toss to combine and heat through for 2-3 minutes.
  • Return the cooked shrimp to the skillet and toss to combine with the couscous mixture. Cook for an additional 1-2 minutes until everything is heated through.
  • Remove from heat and transfer the shrimp and couscous mixture to a serving platter. Sprinkle with crumbled feta cheese and chopped parsley before serving.
