Created by: Howcan Team
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and transfer to a large bowl to cool.
- In a small bowl, whisk together 1/4 cup extra virgin olive oil, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to make the dressing.
- Add the cherry tomatoes, cucumber, Kalamata olives, red onion, and fresh parsley to the quinoa. Pour the dressing over the salad and toss to combine.
- Gently fold in the crumbled feta cheese.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld. Enjoy!
Mediterranean Quinoa Salad is a vibrant and nutritious dish that has its roots in the Mediterranean region. This salad gained popularity in the 21st century as a healthy and flavorful alternative to traditional grain-based salads. Renowned chefs like Yotam Ottolenghi and Jamie Oliver have popularized their own versions of this dish, incorporating ingredients such as ripe tomatoes, cucumbers, feta cheese, and Kalamata olives. The key to a delicious Mediterranean Quinoa Salad lies in the freshness of the ingredients and the zesty dressing, typically made with olive oil, lemon juice, and a blend of Mediterranean herbs. Today, the best versions of this dish can be found in Mediterranean-inspired restaurants and health-conscious cafes. The key to making a standout Mediterranean Quinoa Salad is to ensure the quinoa is perfectly cooked and fluffy, and to use high-quality, ripe vegetables and tangy feta cheese. For a unique twist, some chefs also add grilled vegetables or marinated artichoke hearts to elevate the flavors of this beloved dish.
