  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Lemon wedges for serving

  • 1 zucchini, sliced
  • 1 red onion, sliced

  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Lemon wedges for serving

Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, mix together 1 tablespoon of olive oil, dried oregano, dried thyme, garlic powder, salt, and pepper. Toss the chicken strips in the mixture until well coated.
  • In another bowl, toss the sliced red bell pepper, yellow bell pepper, zucchini, and red onion with the remaining 1 tablespoon of olive oil, salt, and pepper.
  • Grill the marinated chicken strips for 5-6 minutes on each side, or until fully cooked and slightly charred. Remove from the grill and set aside.
  • Grill the seasoned vegetables for 3-4 minutes on each side, or until tender and grill marks appear. Remove from the grill and set aside.
  • While the chicken and vegetables are grilling, prepare the couscous according to package instructions.
  • To assemble the bowls, divide the cooked couscous among 4 serving bowls. Top each bowl with grilled chicken, grilled vegetables, chopped fresh parsley, and crumbled feta cheese.
  • Serve with lemon wedges on the side for squeezing over the bowls before eating.
