Instructions

  • Heat a skillet over medium heat and add the maple sausage links. Cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and set aside.
  • In a bowl, whisk together 4 eggs, 1/4 cup of milk, and salt and pepper to taste. Pour the egg mixture into the same skillet used for the sausage and cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked to your desired consistency. Remove from heat.
  • While the eggs are cooking, toast 2 slices of bread until golden brown. Mash 1 ripe avocado in a bowl and stir in 1 tablespoon of olive oil, 1 teaspoon of lemon juice, 1/4 teaspoon of red pepper flakes, and 1/4 teaspoon of garlic powder. Spread the avocado mixture onto the toasted bread slices.
