- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup maple syrup
- 3 eggs

- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 325°F (165°C).
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat 24 oz softened cream cheese until smooth. Gradually add 1 cup maple syrup, mixing until well combined. Add 3 eggs, one at a time, mixing well after each addition. Stir in 1 tsp vanilla extract. Pour the mixture over the crust in the springform pan.
- Sprinkle 1/2 cup chopped pecans over the top of the cheesecake batter.
- Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
