  • In a large bowl, beat 24 oz softened cream cheese until smooth. Gradually add 1 cup maple syrup, mixing until well combined. Add 3 eggs, one at a time, mixing well after each addition. Stir in 1 tsp vanilla extract. Pour the mixture over the crust in the springform pan.
  • Sprinkle 1/2 cup chopped pecans over the top of the cheesecake batter.
  • Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
