  • 1/2 tsp of cumin
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 tbsp of olive oil

Instructions

  • In a medium bowl, combine the diced mango, red onion, cilantro, jalapeno, and lime juice. Season with salt and pepper to taste. Set aside.
  • In a small bowl, mix the chili powder, cumin, and a pinch of salt. Toss the shrimp in the spice mixture until evenly coated.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from heat.
  • Warm the flour tortillas in a dry skillet or in the microwave for 20 seconds.
  • To assemble the tacos, place a few shrimp on each tortilla and top with the mango salsa.
  • Serve immediately and enjoy!
