Ingredients
- 1 lb of shrimp, peeled and deveined
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- 1 tsp of chili powder
- 1/2 tsp of cumin
- Salt and pepper to taste
- 8 small flour tortillas
- 1 tbsp of olive oil
Instructions
- In a medium bowl, combine the diced mango, red onion, cilantro, jalapeno, and lime juice. Season with salt and pepper to taste. Set aside.
- In a small bowl, mix the chili powder, cumin, and a pinch of salt. Toss the shrimp in the spice mixture until evenly coated.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from heat.
- Warm the flour tortillas in a dry skillet or in the microwave for 20 seconds.
- To assemble the tacos, place a few shrimp on each tortilla and top with the mango salsa.
- Serve immediately and enjoy!
