Mango Salsa Salmon Burger with Spicy Chipotle Mayo

Ingredients
- 1 lb salmon fillet, skin removed
- 1/2 cup bread crumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 egg
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 burger buns
- 1 mango, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1 jalapeno, seeded and diced
- 2 tbsp lime juice
- 1/4 cup mayonnaise
- 1 tbsp adobo sauce (from canned chipotle peppers)
- 1 tsp lime juice
- 1/2 tsp honey
Instructions
- In a food processor, pulse the salmon fillet until finely chopped.
- In a large bowl, combine the chopped salmon, bread crumbs, red onion, cilantro, egg, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the salmon mixture into 4 patties and refrigerate for 10 minutes to firm up.
- Preheat a grill or grill pan over medium-high heat. Grill the salmon burgers for 4-5 minutes on each side, or until cooked through.
- In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeno, and 2 tbsp of lime juice to make the mango salsa. Set aside.
- In another bowl, mix together the mayonnaise, adobo sauce, 1 tsp of lime juice, and honey to make the spicy chipotle mayo.
- Toast the burger buns on the grill for 1-2 minutes.
- Assemble the salmon burgers by spreading the spicy chipotle mayo on the bottom half of each bun, placing a salmon patty on top, and topping with the mango salsa. Add the top half of the bun and serve immediately.
