Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mixed greens
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and finely chopped
- 2 tablespoons lime juice
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
Instructions
- Preheat grill to medium-high heat.
- Brush salmon fillets with olive oil and season with salt and pepper.
- Grill salmon for 4-5 minutes per side, or until cooked through. Remove from grill and set aside.
- In a medium bowl, combine diced mango, red onion, cilantro, jalapeno, lime juice, cumin, and chili powder. Mix well to make the mango salsa.
- Place a handful of mixed greens on each plate, creating a bed for the salmon burger.
- Place a grilled salmon fillet on top of the mixed greens on each plate.
- Spoon mango salsa over the grilled salmon fillets.
- Serve immediately and enjoy!
