Ingredients
- 1 lb fresh salmon fillet, skin removed
- 1/4 cup bread crumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 ripe mango, peeled and diced
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons lime juice
- 4 whole wheat burger buns
- Lettuce leaves, for serving
Instructions
- In a food processor, pulse the salmon fillet until finely chopped.
- In a large bowl, combine the chopped salmon, bread crumbs, 1/4 cup red onion, 1/4 cup cilantro, egg, salt, and black pepper. Mix until well combined.
- Divide the salmon mixture into 4 equal portions and shape into burger patties.
- Preheat a grill or grill pan over medium-high heat. Cook the salmon burgers for 4-5 minutes on each side, or until cooked through.
- In a separate bowl, combine the diced mango, red bell pepper, 1/4 cup red onion, 2 tablespoons cilantro, jalapeno pepper, and lime juice to make the mango salsa.
- Toast the whole wheat burger buns on the grill for 1-2 minutes, until lightly browned.
- To assemble the burgers, place a salmon patty on the bottom half of each bun. Top with a generous spoonful of mango salsa and a few lettuce leaves. Place the top half of the bun on top and serve immediately.
