Ingredients
- 4 salmon fillets (6 oz each)
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and minced
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the diced mangoes, red onion, red bell pepper, cilantro, jalapeno, lime juice, honey, cumin, and season with salt and pepper. Mix well to make the mango salsa.
- Brush the salmon fillets with olive oil and season with salt and pepper.
- Place the salmon fillets on the grill and cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks.
- Remove the salmon from the grill and top each fillet with a generous spoonful of mango salsa.
- Serve the mango salsa salmon immediately, and enjoy!
