Ingredients
- 2 ripe mangoes, diced
- 2 ripe avocados, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- 8 tostada shells
- 1/2 cup mayonnaise
- 1 tablespoon adobo sauce (from a can of chipotle peppers in adobo)
- 1 teaspoon lime juice
- 1/2 teaspoon garlic powder
Instructions
- In a large bowl, combine the diced mangoes, diced avocados, finely chopped red onion, seeded and finely chopped jalapeno, chopped cilantro, and the juice of 2 limes. Season with salt and pepper to taste. Mix well and set aside.
- In a small bowl, prepare the chipotle aioli by combining the mayonnaise, adobo sauce, lime juice, and garlic powder. Mix until well combined. Set aside.
- Preheat the tostada shells according to package instructions, or heat them in a preheated oven at 350°F for 5 minutes until crispy.
- To assemble the tostadas, spoon the mango and avocado salsa onto each tostada shell. Drizzle with the chipotle aioli.
- Serve immediately and enjoy!
