Instructions

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish.
  • Cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a large saucepan, melt 1/4 cup of unsalted butter over medium heat.
  • Stir in 1/4 cup of all-purpose flour and cook for 1-2 minutes to make a roux.
  • Gradually whisk in 2 1/2 cups of whole milk and cook, stirring constantly, until the mixture thickens.
  • Reduce the heat to low and stir in 2 cups of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese until melted and smooth.
  • Season the cheese sauce with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of paprika.
  • Add the cooked elbow macaroni to the cheese sauce and stir to combine.
