Instructions

  • Preheat the oven to 325°F. Grease a 9-inch springform pan.
  • In a food processor, pulse 1 1/2 cups of Lucky Charms cereal until finely ground. In a medium bowl, combine the ground cereal, graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  • In a large bowl, beat the cream cheese, 1 cup of sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully combined.
  • Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula. Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Remove from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours or overnight.
  • Before serving, spread the whipped cream over the top of the cheesecake. Sprinkle the remaining 1/2 cup of Lucky Charms cereal on top. Slice and enjoy!
