Instructions

  • In a mixing bowl, combine 1 lb of chopped cooked lobster meat, 1/4 cup of mayonnaise, 1 tablespoon of lemon juice, 1 tablespoon of chopped chives, and 1 teaspoon of Dijon mustard. Season with salt and pepper to taste.
  • Place the martini glasses in the freezer to chill for at least 10 minutes.
  • Fill a shaker with ice and add the lobster mixture. Shake well to chill the mixture.
  • Remove the chilled martini glasses from the freezer and strain the lobster mixture into the glasses.
