Ingredients
- 1 lb cooked lobster meat, chopped
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon chopped chives
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 4 martini glasses
- Ice
- Lemon twists for garnish
Instructions
- In a mixing bowl, combine 1 lb of chopped cooked lobster meat, 1/4 cup of mayonnaise, 1 tablespoon of lemon juice, 1 tablespoon of chopped chives, and 1 teaspoon of Dijon mustard. Season with salt and pepper to taste.
- Place the martini glasses in the freezer to chill for at least 10 minutes.
- Fill a shaker with ice and add the lobster mixture. Shake well to chill the mixture.
- Remove the chilled martini glasses from the freezer and strain the lobster mixture into the glasses.
- Garnish each glass with a twist of lemon and serve immediately.
