Ingredients
- 6 large potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese

- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
- Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain and place in a large mixing bowl.
- In the mixing bowl with the potatoes, add 1/2 cup sour cream, 1/2 cup mayonnaise, 1/2 cup shredded cheddar cheese, 1/4 cup chopped green onions, 1/4 cup cooked and crumbled bacon, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Mix until well combined.
- Transfer the potato mixture to the prepared baking dish and spread it out evenly. Top with the remaining 1/2 cup shredded cheddar cheese, 1/4 cup chopped green onions, 1/4 cup cooked and crumbled bacon, and 1/4 cup grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for 5 minutes. Sprinkle with chopped fresh parsley before serving.
