Ingredients
- 1 cup dried lentils
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili flakes
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, celery, and bell pepper. Cook for 5-7 minutes until the vegetables are softened.
- Add the lentils, diced tomatoes, cumin, paprika, chili flakes, and vegetable broth to the pot. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the lentils are tender.
- Taste and adjust the seasoning if needed. If you prefer a spicier stew, you can add more chili flakes at this point.
- Serve the spicy lentil and vegetable stew hot, garnished with fresh cilantro. Enjoy!
