Instructions

  • In a large pot, place the beef tongue, chopped onion, minced garlic, bay leaves, cumin, oregano, salt, and black pepper.
  • Cover with water and bring to a boil. Reduce heat, cover, and simmer for 2.5 to 3 hours, or until the tongue is tender.
  • Remove the tongue from the pot and let it cool. Peel off the tough outer skin and slice the meat thinly.
  • Heat the corn tortillas on a griddle or in a skillet until warm and pliable.
