- 1 1/2 lbs boneless, skinless chicken thighs
- 3 stalks lemongrass, white part only, finely chopped
- 4 cloves garlic, minced
- 1 shallot, finely chopped
- 1 red chili, finely chopped
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- Fresh cilantro and lime wedges for garnish
Instructions
- In a bowl, combine the chopped lemongrass, garlic, shallot, red chili, fish sauce, soy sauce, brown sugar, and black pepper to make the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes in the refrigerator.
