Instructions

  • Stir in 1 cup of barley and cook for 2 minutes, stirring occasionally.
  • Pour in 6 cups of vegetable broth and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 30 minutes, or until the barley is tender.
  • Stir in 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Add 4 cups of chopped fresh spinach and cook for 5 minutes, or until the spinach is wilted.
  • Remove the pot from the heat and stir in 1/4 cup of fresh lemon juice.
  • Taste and adjust seasoning if needed.
  • Serve hot and enjoy!
