Ingredients
- 1 cup barley
- 6 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups fresh spinach, chopped
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in 1 cup of barley and cook for 2 minutes, stirring occasionally.
- Pour in 6 cups of vegetable broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 30 minutes, or until the barley is tender.
- Stir in 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add 4 cups of chopped fresh spinach and cook for 5 minutes, or until the spinach is wilted.
- Remove the pot from the heat and stir in 1/4 cup of fresh lemon juice.
- Taste and adjust seasoning if needed.
- Serve hot and enjoy!
