Instructions

  • Cook the linguine pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant.
  • Pour in the chicken broth, lemon juice, lemon zest, and black pepper. Bring to a simmer and cook for 2-3 minutes to reduce the sauce slightly.
  • Add the cooked linguine and cooked shrimp to the skillet. Toss to coat the pasta and shrimp with the lemon pepper sauce. Cook for an additional 2-3 minutes to heat through.
  • Season with salt to taste and sprinkle with chopped fresh parsley before serving.
