  • 8 oz of linguine pasta
  • 1 lb of large shrimp, peeled and deveined
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves of garlic, minced
  • 1/4 cup of fresh lemon juice
  • 1/2 cup of grated parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Cook the linguine pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus and garlic, and sauté for 3-4 minutes until the asparagus is tender-crisp.
  • Return the cooked shrimp to the skillet with the asparagus. Add the cooked linguine, lemon juice, and grated parmesan cheese. Toss everything together until well combined and heated through.
  • Remove the skillet from the heat and sprinkle with chopped fresh parsley. Toss once more to combine.
  • Divide the pasta among serving plates and garnish with additional parmesan cheese and parsley if desired. Serve immediately and enjoy!
